1 Violation of Code: [46.101] * The Person in Charge did not demonstrate adequate knowledge of the PA Food Code.
* The food facility operator shall be the Person in Charge or shall designate a Person in Charge and shall ensure that a Person in Charge is present at the food facility during all hours of operation. New Violation.
4 Violation of Code: [46.151(a)] * An open employee's beverage container was observed to be stored on top of the cold bin unit in the mobile vending unit during food operation. New Violation.
8 Violation of Code: [46.981(h)] * The handwash sink on the mobile unit was blocked by container with stagnant water and soiled utensils and not accesible at all times for employee use.
* Hot water at the handsink station was observed at 94.3 Degrees F New Violation.
13 Violation of Code: [46.301] * Various uncovered food items in the mobile unit is not protected from roaches that is falling from the ceiling of the mobile unit during time of inspection. New Violation.
20 Violation of Code: [46.385(a)(2)] * Various bottles of white sauce was held at a temperature range of 67.0-105.3 degrees F rather than 41 degrees F or below as required.
* Raw chicken was held at 45.1 degrees F, marinated chicken was held at 70.7 degrees F, sliced tomatoes was held at 76.1 degrees F rather than 41 degrees F or below as required.

Due to imminent health hazards observed during this inspection, the establishment has been issued a Cease Operations Order and must discontinue food operations immediately. The establishment cannot operate for a minimum of 48 hours. The establishment cannot operate until the required fee is paid and the establishment is approved by the Department to resume operations.
